Pierre Noire
This 100% Cabernet Franc wine is hand-harvested from vines that are more than 20 years old. The deep roots these vines have developed make the most out of the schist soil upon which they are grown. We pick only when the tannins are at full maturity and in balance with the luscious fruit that characterizes all the wines from Château de la Viaudière. Fermentation and maceration is temperature-controlled but allowed to proceed naturally. Slow pressing and ageing for over 12 months in French oak barrels ensure a wine that is round with generous fruit and solid structure.
Best served at a cool room temperature, we recommend opening a few hours before drinking to allow the wine to breathe and come into its own. On the palate, hints of vanilla and notes of dark cherry and plum are supported by soft structured tannins. This is the ideal accompaniment to steak, strong cheeses, or roasted vegetables in gravy.
